Aurora restaurant in Loulé will host a special wine pairing dinner


Experience a special dinner created by chef Vítor Veloso and sommelier Pedro Martin on April 20

The newly opened Aurora restaurant in Loulé will host a wine-pairing dinner this Wednesday, April 20 at 8pm. Chef Vítor Veloso and sommelier Pedro Martin have prepared a special dinner which will pair delicious dishes with a selection of wines from Martin Boutique Wines.

The experience will feature homemade bread served with Azores butter and Monterosa olive oil; cured and brazed mackerel served with tomato and togarashi sauce and grilled radishes; peas and lemongrass vichyssoise, crab, tuna muxama and chili pepper olive oil.

Also on the menu are roasted salsify, smoked pig ear, garlic mayonnaise, and 12-month cured São Jorge cheese; lily, broccoli, mushrooms, razor clams and cozido broth; Black Angus sirloin steak, aubergine, cured egg yolk, black garlic, and bimi broccoli; and lastly Madeira banana with chocolate and walnut milk.

“We believe this can be a great option for a unique dinner, especially at a time when many Portuguese head south for a few days’ rest,” says the restaurant in a press statement.

The history behind Aurora

Inaugurated in July 2021, the Aurora restaurant offers guests the opportunity to taste fresh and seasonal Algarvian flavours. According to chef Vítor Veloso in a statement to Notícias ao Minuto, the opening of the restaurant was an old dream come true. “I go to the market every day to get the freshest products of the region, as I use them daily in my traditional recipes. We want our customers to have an authentic explosion of flavours and sensations here at the Aurora.”

This signature restaurant, named in honour of the chef’s father’s grandmother, has a Portuguese soul, combined with a modern and rustic décor.

Vítor Veloso is a chef with more than 20 years of experience both in Portugal and abroad. He has worked at “high-end hotels, including Conrad Algarve, and Michelin-starred restaurants, such as Fortaleza do Guincho, and acquired significant experience as a private chef, particularly in the Algarve’s Golden Triangle area. He also launched the À Terra restaurant at Vila Monte Farm House, an idyllic place in the Algarve, with a philosophy of using locally grown seasonal products, such as olive oil, gourmet salt, figs, carob and oranges.

Now he has settled in his hometown of Loulé, in the very heart of the city, “cooking excellent authentic food with a focus on traditional recipes with high-quality Portuguese ingredients”.
