Hilton Vilamoura As Cascatas Golf Resort & Spa has unveiled a new summer menu inspired by the flavours of the Algarve, alongside an updated visual identity for its restaurant.

The hotel’s Cilantro restaurant has redesigned its offering to reflect the region’s identity, with a stronger focus on local ingredients and seasonal produce. The dishes are described as “fresh, light, aromatic and genuine”, inspired by the Algarve coastline and the nearby Ria Formosa.

Led by chef André Simões, whose “creative and sensitive approach has been strengthening the restaurant’s link to the territory and the authenticity of the Algarve’s flavours”, new additions include a fish soup with mint and toast, a slow-cooked egg served with cured pork, asparagus, spinach, crispy potato and hollandaise sauce, and turbot fillet paired with celeriac purée, vegetable “pearls” and herb olive oil.

Meanwhile, a highlight of the dessert menu is a carob tart with almond caramel and citrus notes.

The new menu also introduces a more modern approach to dining, with around 15% of dishes plant-based, including vegetarian and vegan options such as portobello mushrooms with seitan and vegan cheese.

“The inspiration for this new menu comes from the Algarve – its light, its sea and the richness of its products,” the chef says. “We aimed to create dishes that respect the essence of the ingredients, working with them in a light and contemporary way to provide an authentic and flavourful experience.”

Ingredients including herbs and vegetables are grown in the hotel’s own organic garden and used throughout the menu.
