Experience Cocktail Bar opens at Palmares


Award-winning mixologist Jaime Montgomery is heading up the recently-opened Experience Cocktail Bar at the Palmares Clubhouse

Jaime Montgomery’s passion for perfection drives him to experiment with modern ideas and techniques to produce “drinks of exceptional flavour and ingenuity”.

At the Experience Bar, Montgomery will be serving menus of five, seven and nine ‘moments’ that allow customers to sample a flight of flavours. They include modern twists on classic cocktails, such as the Negroni and Manhattan, as well as some exciting and surprising new combinations (Apples & Oysters, anyone?).

Patrons will also be able to purchase individual cocktails for sipping slowly on the terrace as the sun sets.

Jaime Montgomery says: “The Experience Bar menu is our reinterpretation of classic cocktails, along with the introduction of modern ideas and techniques to provide original and quirky drinks. The bar’s location, with exceptional sunset views over the Bay of Lagos, warranted a visionary approach to the menu, which befitted the superior setting.”

The opening of the Experience Bar follows the recent launch of Al Sud at Palmares. The fine-dining restaurant is headed up by Michelin-starred chef Louis Anjos, whose tasting menus packed with fresh takes on traditional Algarve flavours have seen the venue fully booked ever since it opened.

The Palmares Ocean Living & Golf resort, near Lagos, is owned and operated by Kronos Homes.

Palmares is also home to a 27-hole golf course, designed by American architect Robert Trent Jones Jr, while plans are in place to add a pool and wellness facilities in the longer-term, as well as a second five-star hotel to complement the existing 20-room, boutique five-star hotel that’s already onsite.
