Signature cocktails, Algarve ingredients and marina views have made the Tivoli Marina Vilamoura bar one of the region’s leading mixology destinations.
Overlooking the Marina, The Argo Cocktail Bar at Tivoli Marina Vilamoura has established itself as one of Portugal’s leading destinations for contemporary mixology.
Combining sophistication, tranquillity and warm hospitality, the bar invites guests to discover a collection of signature cocktails where creativity, technique and storytelling come together to create a truly immersive sensory experience.

The latest cocktail menu, “The Tales of the Unexpected”, features more than 15 signature creations that challenge expectations and encourage discovery.

Each drink is carefully crafted through a thoughtful combination of aromas, flavours and contemporary techniques, with some cocktails receiving a finishing touch at the table through aromatic sprays that add another sensory dimension to the experience.
Among the highlights are Soul of Japan, which combines Grey Goose Pear Vodka, Japanese gin, umeshu (plum liqueur), sudachi (Japanese citrus), miso, mirin and umeboshi (pickled plum); The Idol, made with Grey Goose, Italicus, Earl Grey tea, passion fruit, premium gin and coconut; and the bar’s signature cocktail, The Argo, featuring premium gin, plankton, lime, dill, sea fennel and inula.

“It’s our interpretation of the Algarve in a glass, where the sea, nature and innovation come together,” says Rui Lopes, Food & Beverage director at Tivoli Marina Vilamoura.
Those with a sweet tooth can opt for Popcorn and Apples, made with Jack Daniel’s, Calvados, rooibos tea, green apple, popcorn, plant-based butter and vanilla. With its toasted and fruity notes, it is wonderfully nostalgic.

According to Rui Lopes, developing each cocktail is “a deeply collaborative process”. Many creations begin with a single ingredient or concept before being explored by the entire team, with each member contributing “different perspectives, from creativity to technical expertise”, he explains.
“There is a strong culture of sharing, testing and constant experimentation until we achieve a balanced, consistent result that truly reflects the identity of the bar in every glass.”

To complement the cocktails, the menu also features carefully selected food pairings designed to match the different flavour profiles. Rui Lopes recommends blinis with caviar alongside the more elegant and delicate cocktails, whilst mini burgers and smoked salmon sandwiches make for more relaxed options. Shrimp or seasonal vegetable tempura provides a lighter alternative, perfect for sharing.
Since opening in 2023, The Argo has helped redefine the role of hotel bars in Portugal, drawing inspiration from a concept long established in major international cities. “Our aim was to bring that same dynamic to the Algarve, making the hotel bar a destination in its own right, not only for guests but also for local residents and visitors,” says Rui Lopes.

The name itself reinforces that identity. Inspired by the legendary ship from Greek mythology that carried the Argonauts in search of the Golden Fleece, The Argo invites guests to embark on their own journey of discovery. “It symbolises adventure, exploration and the pursuit of the extraordinary,” he explains.
This philosophy also reflects a commitment to celebrating the region. The cocktails regularly incorporate seasonal Algarve ingredients, from local citrus fruits and aromatic herbs to products connected with the sea. To achieve this, the bar works closely with local producers, strengthening the link between contemporary mixology and the Algarve’s distinctive identity.

As the region increasingly establishes itself as a luxury tourism destination, Rui Lopes believes we are undergoing a significant transformation. “There is a clear qualitative leap, moving beyond that reputation of a sun-and-beach destination to become a genuine hub for sophisticated experiences where gastronomy, design, well-being and culture come together.”
The Argo was quickly recognised for these principle. Just months after opening, it received the Best Cocktail Bar award at the inaugural Condé Nast Traveler Hotel & Mantel Awards.
In 2024, it was included in the Top Cocktail Bars of the Iberian Peninsula Guide, whilst Nelson de Matos, who leads the bar’s mixology programme, was named Best Bartender at the Lisbon Bar Show Awards 2024.
In 2026, The Argo also secured the Best Hotel Bar award at the Lisbon Bar Show for the third consecutive year.

For Rui Lopes, however, the greatest achievement lies in the consistency of the team’s daily work. “More than any individual award, we’re proud to have established ourselves as a benchmark for creativity and memorable experiences, recognised by both Portuguese and international guests.”

Looking ahead, the ambition is to keep surprising guests. New menus, fresh ideas and a team that continues to evolve are all part of the strategy to keep The Argo at the forefront of Portuguese mixology. “We want to continue raising the experience and ensuring The Argo keeps growing,” concludes Rui Lopes.
